Description

A pleasant smell of wood smoke floated in the air.

The workers of the bakery were at full pace, before sunrise as usual.

“You need to knead the dough completely”said Hugo Giuffrida with an assuring tone from his 30 years of experience.

Shirtless to support the heat of the oven, Hugo worked the dough on the large wooden table, took it in his two hands and with a perfect movement,

lifted it up and threw it against his back covered with sweat, he repeated the movement again and again, first over the left shoulder then the right.

“The technique gives an excellent texture to the dough”, he declared.

“And plus, the dough is naturally salted”
